Soft Vegan Apple Cake - Recipe

ingredients:

  • 250g spelt flour (I take the white/non-wholegrain one)

  • 130g coconut sugar (or 80g erythritol + 50g coconut sugar)

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp bourbon vanilla

  • 0,5 tsp salt

  • 150g unsweetened coconut yoghurt

  • 2 tblsp apple sauce (=egg substitute)

  • 60ml olive oil

  • 4 apples

how to:

  • mix all ingredients (without the apples)

  • peel 2 apples and cut them into small pieces (1cm)

  • stirr apple pieces into dough

  • line the bottom of a cake tin with parchment paper & grease the sides with a little olive oil

  • pour the dough into the cake tin

  • peel two more apples and cut them into fine slices

  • decorate the cake's surface with the apple slices

  • sprinkle with some cinnamon

  • bake at 160°C for about 60 minutes

  • please note: the cake tin needs to be covered with a heat resistant lid troughout the entire baking time - so that the surface doesn't get burnt

  • make a toothpick test before taking it out (stick toothpick into cake - if it comes out clean, the cake is fully baked)
