Semolina Brownies - Recipe
ingredients:
200 g fine semolina flour
100 g erythritol
40 g coconut blossom sugar
30 g raw cocoa powder
1 tsp instant coffee granules (enhances the chocolate flavour)
80 ml olive oil
200 ml oat milk
2 tsp bourbon vanilla
0,5 tsp salt
2 tsp baking powder + 1 tsp baking soda
100 g chopped dark chocolate (at least 70% cocoa, preferbly sweetend with erythritol or dates)
how to:
mix dry ingredients
add olive oil and oat milk
combine all ingredients with a spoon or hand mixer
gently fold in chopped chocolate
allow dough to rest for 15 minutes (semolina flour will absorb the liquids and swell)
bake in a square glass baking dish at 160°C for 30 minutes
sprinkle with raw cocoa powder before serving
