Semolina Brownies

Semolina Brownies - Recipe

ingredients:

  • 200 g fine semolina flour

  • 100 g erythritol

  • 40 g coconut blossom sugar

  • 30 g raw cocoa powder

  • 1 tsp instant coffee granules (enhances the chocolate flavour)

  • 80 ml olive oil

  • 200 ml oat milk

  • 2 tsp bourbon vanilla

  • 0,5 tsp salt

  • 2 tsp baking powder + 1 tsp baking soda

  • 100 g chopped dark chocolate (at least 70% cocoa, preferbly sweetend with erythritol or dates)

how to:

  • mix dry ingredients

  • add olive oil and oat milk

  • combine all ingredients with a spoon or hand mixer

  • gently fold in chopped chocolate

  • allow dough to rest for 15 minutes (semolina flour will absorb the liquids and swell)

  • bake in a square glass baking dish at 160°C for 30 minutes

  • sprinkle with raw cocoa powder before serving
