Raw Chocolate Ganache Cake - Recipe
chocolate ganache:
150g raw cashews (soaked in boiled water for 2-3 hours)
50g cashew butter
100g dark chocolate (at least 90%), melted in 200ml hot oat Milk
20g raw cocoa powder
50ml date syrup
70g date sugar
0,5 tsp salt
1 tsp bourbon vanilla
blend all ingredients until smooth
base:
100g healthy cookies (e.g. preferably sweetened with dates or other fruits), crushed and then combined with:
70g melted Butter
a pinch of sea salt
1 tsp of cinnamon
assembly:
line a cake tin with plastic wrap
press the cookie base on the bottom
pour the chocolate ganache on top
refrigerate until the ganache thickens
