Raw Chocolate Ganache Cake - Recipe

chocolate ganache:

  • 150g raw cashews (soaked in boiled water for 2-3 hours)

  • 50g cashew butter

  • 100g dark chocolate (at least 90%), melted in 200ml hot oat Milk

  • 20g raw cocoa powder

  • 50ml date syrup

  • 70g date sugar

  • 0,5 tsp salt

  • 1 tsp bourbon vanilla

  • blend all ingredients until smooth

base:

  • 100g healthy cookies (e.g. preferably sweetened with dates or other fruits), crushed and then combined with:

  • 70g melted Butter

  • a pinch of sea salt

  • 1 tsp of cinnamon

assembly:

  • line a cake tin with plastic wrap

  • press the cookie base on the bottom

  • pour the chocolate ganache on top

  • refrigerate until the ganache thickens
