Classic Sourdough Brownies - Recipe

ingredients:

  • 60 g sourdough starter + 120 ml lukewarm water + 100 g fine spelt flour

  • 50 g fine spelt flour extra

  • 90 g erythritol

  • 70 g coconut blossom sugar

  • 40 g raw cocoa powder

  • 1 tsp instant coffee granules (enhances the chocolate flavour)

  • 120 ml olive oil

  • 3 eggs

  • 2 tsp bourbon vanilla

  • fleur de sel (sea salt flakes)

how to:

  • mix soursdough starter with water and flour & let it ferment for 2-3 hours

  • stirr in the extra 50 g of spelt flour

  • add all other ingredients (except fleur de sel) and blend with a hand mixer

  • pour batter into a greased square glass baking dish

  • carefully sprinkle with a few pinches of fleur de sel

  • bake at 160°C for 30 minutes
