Classic Italian Tiramisu

ingredients:

  • 500g mascarpone

  • 300g whipped cream

  • 80g erythritol + 20g raw sugar

  • 0,5 tsp salt

  • 2 level tsp lemon zest

  • 100g lady fingers (preferably made of organic spelt flour)

  • 500ml black coffee (can be made of instant coffee)

  • 50ml dark rum

  • some raw unsweetened cocoa powder

how to:

  • mix mascarpone, erythritol, sugar, salt, lemon zest with a blender until smooth

  • stirr in whipped cream

  • mix coffee and rum

  • very briefly soak ladyfingers one by one in coffee-rum-mixture (a second from either side) and immediately use them for the assembly

  • arrange enough ladyfingers in a single layer to cover the bottom of a dish (glass dishes look nice about 15x20cm are sufficient), make sure to not leave big gaps between the ladyfingers

  • add half of the mascarpone mixture on top of the ladyfingers and smooth out to the edges

  • arrange another layer of soaked ladyfingers

  • add the rest of the mascarpone mixture and again smooth out into an even layer

  • dust the surface with cocoa powder (this works best with a sieve)

  • chill for 2-3 hours

  • before serving sprinkle individual portions with some more cocoa powder
