Cakey Sourdough Yoghurt Brownies - Recipe

ingredients:

  • 30 g sourdough starter + 60 ml lukewarm water + 50 g fine spelt flour

  • 100 g fine spelt flour extra

  • 10 g tapioca or corn starch

  • 90 g erythritol

  • 40 g coconut blossom sugar

  • 30 g raw cocoa powder

  • 1 tsp instant coffee granules (enhances the chocolate flavour)

  • 100 ml olive oil

  • 50 ml soy milk

  • 100 g plain Greek yoghurt (works with plantbased Greek yoghurt too)

  • 2 tsp bourbon vanilla

  • 0,5 tsp salt

  • optional: 100 g chopped dark chocolate (preferably sweetened with erythritol or stevia)

how to:

  • mix soursdough starter with water and flour & let it ferment over night

  • stirr in the extra 100 g of spelt flour

  • add all other ingredients and blend with a hand mixer

  • if desired, gently fold in chopped chocolate

  • pour batter into a greased square glass baking dish

  • bake covered at 160°C for 45 minutes

  • optional: sprinkle with raw chocolate powder before serving
