Cakey Sourdough Yoghurt Brownies - Recipe
ingredients:
30 g sourdough starter + 60 ml lukewarm water + 50 g fine spelt flour
100 g fine spelt flour extra
10 g tapioca or corn starch
90 g erythritol
40 g coconut blossom sugar
30 g raw cocoa powder
1 tsp instant coffee granules (enhances the chocolate flavour)
100 ml olive oil
50 ml soy milk
100 g plain Greek yoghurt (works with plantbased Greek yoghurt too)
2 tsp bourbon vanilla
0,5 tsp salt
optional: 100 g chopped dark chocolate (preferably sweetened with erythritol or stevia)
how to:
mix soursdough starter with water and flour & let it ferment over night
stirr in the extra 100 g of spelt flour
add all other ingredients and blend with a hand mixer
if desired, gently fold in chopped chocolate
pour batter into a greased square glass baking dish
bake covered at 160°C for 45 minutes
optional: sprinkle with raw chocolate powder before serving
