Banana-Oat-Bread - Recipe
ingredients:
3 ripe bananas
225g oat flour
2 tsp. baking powder + 1 tsp. baking soda
100g cashew butter
30g erythritol + 30g coconut blossom sugar
2 tbsp. ground chia seeds, stirred into 6 tbsp. water
1 tsp. bourbon vanilla
0,5 tsp. salt
1 tbsp. apple cider vinegar
100g dark chocolate (at least 70% cocoa), chopped
how to:
mix dry ingredients
mash bananas with a fork, then add soaked chia seeds, cashew butter and vinegar
combine all ingredients with a spoon or hand blender
stirr in chocolate
bake in a loaf pan (preferably lined with parchement paper) at 160°C for 45 minutes
tastes best and can be served as a delicious breakfast, if you let it rest overnight
