Banana-Oat-Bread - Recipe

ingredients:

  • 3 ripe bananas

  • 225g oat flour

  • 2 tsp. baking powder + 1 tsp. baking soda

  • 100g cashew butter

  • 30g erythritol + 30g coconut blossom sugar

  • 2 tbsp. ground chia seeds, stirred into 6 tbsp. water

  • 1 tsp. bourbon vanilla

  • 0,5 tsp. salt

  • 1 tbsp. apple cider vinegar

  • 100g dark chocolate (at least 70% cocoa), chopped

how to:

  • mix dry ingredients

  • mash bananas with a fork, then add soaked chia seeds, cashew butter and vinegar

  • combine all ingredients with a spoon or hand blender

  • stirr in chocolate

  • bake in a loaf pan (preferably lined with parchement paper) at 160°C for 45 minutes

  • tastes best and can be served as a delicious breakfast, if you let it rest overnight
